It is not difficult to make vegetarian congee. Just substitute the meat with fresh vegetables. But sometimes knowing what types of vegetables go well with congee take some experimenting. Common vegetarian congees use tubers like carrots, sweet potato and pumpkin to give plain white rice porridge interesting flavor and texture.

Pumpkin rice porridge
Pumpkin contains proteins, fats, fibre, calcium, iron, beta-carotene, vitamin B and C. It can prevent the hardening of the arteries, and is anti-inflammatory. In recent scientific studies, it is found to have elements resembling female hormones.

Ingredients
1 cup of rice
12 cups of water
600g pumpkin, peeled and cut into slices

Directions
  1. Boil the water, add the rice. Bring back to a boil
  2. Lower heat and simmer for 40 minutes
  3. Add the pumpkin slices and simmer for another 20 minutes
