Pork is the most common meat ingredient used by chinese in their cooking. So it comes as no surprise that there are more pork congee or rice porridge recipes. Mostly ground pork is used. Unlike the wontons which require a certain amount of fat to ensure juicy wontons, very lean pork is welcomed in rice porridge.

Minced pork rice porridge

Ingredients
100g Minced pork 1 cups of rice 12 cups of water
1 tbsp julienned ginger
chopped spring onions
Seasoning
pepper & salt to taste
3 tbsp soy sauce
Sesame seed oil
Directions
- Marinate the minced pork with the soy sauce
- Cook it in a microwave oven or steam it or lightly fry it
- Wash the rice, drain thoroughly
- Boil the 12 cups of water in a deep pot.
- Add the rice into the boiling water and lower the heat
- Cook till the rice is done. Remember, stir constantly
- Heat up a separate pot, scoop the cooked rice porridge into it and add in the minced pork

Tomato rice porridge

Ingredients
1 cup of rice
12 cups of water
300g prime pork ribs
2 tomatoes (around 300g)
salt to taste
Directions
- Wash the pork ribs, parboil and drain
- Cook the tomatoes in hot water for about 2 minutes. Peel off the skin and cut into quarters
- Boil the water, add the rice. Bring back to a boil
- Lower heat, and simmer for 20 minutes
- Add the pork ribs and cook for another 30 minutes
- Add the tomatoes and cook for another 20 minutes.
- Add salt to taste. Serve
