There are not many chicken wonton recipes using chicken as the main ingredient. That is, without adding pork.

Did I mention that most chinese wontons are made with ground pork? We Chinese love our pigs. Ok, just kidding.

Eating pork in Singapore is so normal, I didn't even think anyone (except Muslims and Jews) would refuse to eat pork.

However when I was staying in Melbourne for 2 years, I realize that there are MANY people who don't eat pork.

I have some friends who avoid pork like the plague and wouldn't touch anything with pork in them.

Many Chinese restaurants now serve chicken wontons, but do you know that these chicken wontons are still likely to contain a little fatty pork? It is to make the wontons juicier. I know it seems to defeat the purpose. I suspect Chinese chefs can't understand why anyone would hate pork.

Don't worry. You can learn to make your own pure chicken wontons with these wonton recipes using chicken only. No pork included.

Chicken and ginger wonton

1 packet of won ton wrappers

Filling
600g chicken fillets
2 stalks spring onion
8g ginger
¾ cup cold water

Seasonings for filling
1 tsp salt
1 tsp fine sugar

Seasonings 2
1 tsp pepper
1 tbsp sesame seed oil
1 tbsp cornstarch

Directions
  1. Wash and cut the spring onions and ginger into smaller pieces
  2. Process the spring onions and ginger in a food processor together with the cold water. Remove from food processor
  3. Wash the food processor
  4. Wash and cut the chicken fillets into small pieces
  5. Process the chicken fillets with the food processor together with the seasonings for filling. Mix well
  6. Add the spring onions and ginger mixture to the minced meat. Do this slowly or in small batches if you are using the food processor. This ensures that the spring onion and ginger mixture is well absorbed by the minced meat
  7. Add seasonings 2, with cornstarch going in last
  8. Wrap the wontons
  9. Prepare the wonton soup
  10. Boil water and cook the wontons. Drain using a slotted spoon
  11. Pour soup into serving bowls, add the wontons

I know that some people hate ginger while others like more pungent stuff like onions and garlic. You don't have to follow the recipe too strictly. Experiment by adding or substituting your own favorite ingredients.
