Chicken Stock Recipe

I found out that boiling hen should only be used for making chicken stock in a nearly embarrassing way.

I was new in Melbourne and wanted to contribute to a potluck organized by some newly found friends. Conscious of my budget, I went to the Queen Victoria Market to buy some ingredients for a nice chicken stew. I noticed that the boiling hens were much cheaper than the normal ones. Not knowing what they were and too smart to ask the shop assistant, I bought one for my stew.

The stew came out great but the chicken was so tough, I nearly broke my teeth. I saw people taking the stew and the vegetables but the chicken ...

Fortunately nobody asked me why the chicken was so tough. Phew!



Ingredients
2 kg chicken carcass
1/2 boiling hen
1 section of ginger
10 litres of water

Directions
  1. Wash the chicken carcass and boiling hen.
  2. Parboil the carcass and boiling hen. Rinse.
  3. Bring the water to a boil.
  4. Place the chicken carcass and hen at the bottom of a big pot, with the ginger. buy jackets online
  5. Bring the water back to a boil.
  6. Lower the heat to a slow simmer, and cook for 4 hours.
  7. Remove the ingredients and strain the soup stock.
