This black chicken soup uses dried goji berries or chinese wolfberries and red dates to create a light nourishing tonic.
Black chicken is a fairly common ingredient in chinese tonic soups. It is usually accompanied by various complementary chinese herbs to remedy a wide range of ailments.
Most supermarkets and wet markets in Singapore sells black chickens that are already slaughtered and cleaned. The skin of the black chicken is black and the meat also spot streaks of black and may appear unappetitizing for people who aren't used to it. Substitute with a small fresh chicken if you can't find a black chicken or do not like black chicken.
Some people don't eat the black chicken meat as it tends to be quite fibrous.
Ingredients
1 black chicken
8 red dates
10 chinese wolfberries
500ml soup stock
Salt to taste
Directions
- Wash the black chicken and cut into pieces
- Parboil the chicken in water for 2 minutes. Trim away any fats

- Using a slow cooker, bring the chinese soup stock to a boil, lower the heat and add the chicken, dried goji berries or boxthorn fruits and red dates
- Use low heat to achieve a gentle simmer and simmer for 25 minutes
- Do not serve immediately. Let the soup stand for 10 minutes
- Add salt to the soup before serving
