This astragalus chicken soup is a gentle and nourishing tonic soup. It is cooked slowly over a long period of time using a chinese double-boiler.
Try to use kampong chicken or free range chicken if possible as chicken raised in a battery tend to have too much growth hormones.
Recent scientific research conducted on astragalus found it to be beneficial for people with diabetes. It can be found as supplement pills in many natural health food stores but I personally think using astragalus in chinese soups is a the natural way to benefit from it than taking it as pills.
The Chinese believes that astragalus benefits blood circulation and adds it frequently to chinese soups. It has a mild woody taste, a little like liquorice. If you are not used to drinking chinese herbal soups, you may want to reduce the amount accordingly to lighten the herbal taste.
If you don't have a double-boiler, you can still make this soup in a slow cooker or soup pot over the stove. It requires gentle low heat. Add the ingredients to cold water and bring everything to a boil and reduce the heat to low. For over the stove cooking, you will need to use a bit more water to compensate for evaporation.
Ingredients
1 chicken thigh
4 slices of astragalus
8 red jujubes
1 tbsp chinese wolfberries / dried goji fruits
1000ml water
salt

- Cut chicken thigh into pieces. Parboil, wash and trim excess fats. Do remove the skin

- Core the jujubes. Cut into halves
- Place all ingredients in a double-boiler and add the water.
- Bring another big pot of water to boil, place the double-boiler in it and steam for 1 hour
- Add salt to the astragalus chicken soup before serving.
